Roasted Cauliflower - my new favorite side dish

my new favorite side dish - so easy, and so delish I can skip carbs with dinner (I am a carb addict) — is Roasted Cauliflower with Parmesan cheese. I found this recipe on the Weight Watchers site.

now you could get some nice fresh cauliflower, but as much as I love to cook, I sort of hate prep work.  So I picked up a bag of frozen cauliflower (cheap, too), thawed it in the microwave for 4 or 5 minutes on 60 or 70% power.

toss the cauliflower with 1 Tablespoon olive oil, some sea salt, and some pepper.  spread on a tray and roast in a pre-heated 450 degree oven 15 min.  You’re supposed to flip it some during the cooking time but I completely neglected to and it was still delish.  Mine didn’t look as “roasted” as I’d like when the time was up so I upped the temp 15 degrees for another 2 minutes. 

Pull it out and toss with 1/4 cup parmesan cheese.  WW recommends Parmigiano-Reggiano, but I just used the grated shake stuff I had in my fridge. This made about 3 generous servings.
