Tortellini soup

It’s time to bring out some cold-weather favorites, and find a few new ones (I’m looking for easy, tasty, and healthy chicken & dumplings … I’ll let you know when I get that one figured out).  Monday night with homemade bread we had Tortellini Soup — a recipe I first found from weight watchers and adapted.

Here’s my faborite way to make it …

You’ll need:

1 box chicken broth (99% fat free swanson is my favorite — I think it has more flavor than others in the price point)

1 box frozen, chopped spinach

1 can (14.5 oz) diced tomatoes (NOT seasoned — just plain)

garlic

onion

1 bag barilla (or similar brand) three cheese tortellini (smaller size)

In a medium/large pot, over medium-high heat, place 1 tablespoon olive oil, 1 - 2 tablespoons diced onion ( or 1 tablespoon dehydrated onion — what? I’m lazy), 1 - 2 cloves of diced garlic (I get lazy and use the refrigerated stuff and I’ll put in a heaped tablespoon — but I <3 garlic).

Stir these around together to soften/brown slightly.  Then start to slowly add in the chicken broth, I like to add in just a little and let it start to boil, then half the box for a few minutes, then the other half.  I think this helps the garlic/onion flavors penetrate, but I don’t actually know.

Once you’ve added all the broth, add the bag of tortellini.  Cover & let boil 5 minutes.  During this time, thaw out the spinach and drain a little of the liquid.

Remove the cover, add half the spinach, the can of tomatoes, and stir well so the spinach is distributed throughout. Let cook another 5 minutes.

Makes great leftovers. 

Monday I made the above, except I added in an extra 14 oz can of broth, used 3/4 of a family size bag of pasta, and about 2/3 of the spinach.  It was excellent.  I served it with homemade bread (Fleischmann’s mix, with 1/4 cup Kraft grated parmesan added in).  We both had it for dinner Tuesday night as well!  I haven’t tried frieezing it yet, but I’ll let you know if I do.

Watch for a recipe that will use the other half of that box of spinach, next week.
