spanish rice - take it a little farther
Spanish Rice is a go-to that we get into every now and then. We like to mix-in baked chicken that we’ve chopped up, along with some shredded Mexican cheese. Recently, we mixed in 1 cup of Trader Joe’s frozen roasted corn (thawed before mixing in) — it adds a delicious flavor to the rice! I’m not a fan of the corn on it’s own, but it’s the perfect mix-in for something like this. Last night we added 3/4 cup drained black beans. We’ll get 2 nights of 2 big meals out of that!
