Christmas Dinner - Potatoes

For potatoes, I made my new go-to — sour cream mashed potatoes.  I made them for fake Thanksgiving, and for real Thanksgiving, and now for Christmas.  They are delicious, and super-easy.  Also, the presentation is great, and they look really special with a few scallions sprinkled over the top.

The fun twist this year was another Real Simple recipe.  I had just enough left over to make mashed potato leek soup, and got to use my new hand/immersion/stick blender.  The recipe wasn’t clear but I just used the white parts of the leeks (and a little into the green).  The fennel Tim brought home was bigger than a large grapefruit, so I only used half the bulb (I’m also not a big fan of anise).

I highly recommend both recipes for how delicious they are, and how impressive they look, while being very simple to make.
